Caramelised red onion tart
6-8 red onions
Packet ready made puff pastry
Fresh basil leaves
Chop onions into thin slices, soften in pan with olive oil. Add two table spoons balsamic vinegar with a heaped table spoon of brown sugar adding a dash of water if required.
Stir till onions soft and caramelised, season.
Roll pastry into large rectangle to fit your baking sheet. Line baking sheet with baking parchment and put pastry on scoring a large rectangle 2 inches from outer edge.
Prickwillow inside rectangle with a fork then sprinkle on Parmesan.
Spread onions inside scored line, bake in oven at medium heat till pastry golden (approx 25 mins at gas mark 5, 180°C)
Add cherry tomatoes chopped in half - you can return to oven for another 5 mins to soften.
Crumble feta cheese over top, sprinkle with basil leaves.
Serve with green salad and new potatoes.
